I posted before about eating our wild spinach weeds (commonly called Prostrate Pigweed). We’ve gotten so much rain lately I’ve been weeding and eating the pigweed almost every evening for supper, just to keep up with them! Most of the time I wash, chop and throw the plants, stalks and all, into a salad I’m putting together or into a stew. They make tasty additions. But one night there was so much I had to weed that I cooked them up by themselves for supper, with company coming, too. I couldn’t find a good greens recipe, so I just washed them, then steadily tore off the little leaves and tossed them into a pot with some butter. The water on the leaves and the butter slowly cooked them, the first ones cooking the longest and the last ones I threw in cooked only a few minutes. The dish turned out to be the highlight of the evening! It was delicious and unique and the leaves kept their deep green color. Nothing beats delicious, nutritious, free vegetables!
