This is one of my favorite healthful snacks. and it comes to us from a great cookbook called Nourishing Traditions. (That book will get you back to ancient-old ways of cooking and eating!) This recipe below is my version.
Crispy Nuts
Take one large bag of almonds, pecans or walnuts from Sam's Club. Pour entire bag of nuts into a large bowl, cover with filtered water with some salt mixed in, and let soak, with a lid, overnight.
The next morning drain the nuts. Spread them all out on cookie sheets, pizza stones, 9x13 baking pans, etc. I recommend giving the pans a quick spray of oil, but this isn't necessary. Make sure the nuts aren't piled up on each other, but spread out in a single layer.
Place the sheets/pans of nuts into the oven. Heat the oven to between 125-135 degrees. Let the nuts dehydrate all day long (or you can schedule this process for all night long).
Near the end of this time, taste a nut. You can tell by taste if it still has moisture in it, or if it is crispy dry. You want it to be dried enough so that the nuts don't mold at room temperature. The almonds seem to take the longest, as they have the largest moisture content.
This process brings out a concentrated flavor of the nuts, and they store at room temperature in a tall jar for weeks. They are a delicious and healthy snack to have out in a bowl. And they are right there for you to add to your favorite recipes.
