Oven-Baked Apple Pancake

August 8, 2007: Today I made Oven-Baked Apple Pancake for breakfast using the cooking apples. Everyone else seemed more interested in cereal and milk, and I ended up enjoying the apple pancake for breakfast, morning snack & lunch! Yummm...

I had no energy again today. Still, we ran errands a couple of times and I did laundry. MOst of the day I read and rested.

OVEN-BAKED APPLE PANCAKE

Place 2 Tablespoons butter in a 10-inch ovenproof skillet. Place in the oven while it's warming up to 400 degrees, and remove when butter is melted. While the butter is melting, core and slice enough apples to fill most of the skillet. In your blender beat 3 eggs. Add 1/2 cup all-purpose flour, 1/2 cup milk and 1/4 teaspoon salt, and mix until smooth. Immediately pour into the hot skillet. Place sliced apples into mixture in skillet. Sprinkle a generous amount of brown sugar over the top, and several shakes of cinnamon.

Bake about 25 minutes or till puffed and well browned. For extra crispiness, broil for a minute so the brown sugar carmelizes a little. Really good served with whipped or plain cream, or a little milk. Makes 6 servings.
