August 8, 2007: Today my energy has finally returned! I ran errands in the morning, after I attempted making applesauce for our breakfast pancakes. It tasted delicious, if a little tart, but I really do need a food mill, so the rest is keeping in the fridge until I can get one. There was something wonderful about eating my own applesauce from our free cooking apples, on top of whole grain pancakes with real maple syrup.
After lunch I had a little nap and rest. Then my energy surged again after watching an episode of "The Good Neighbors." In it they were cleaning house, so I decided to clean. (I was actually stalling from doing my sewing.) So I thoroughly cleaned the den. Then I tackled several piles in my bedroom, while the kids did the 5:00 Cleanup.
For supper I took the flat, hard loaf of rye sourdough and made Apricot Bread Pudding--it turned out only okay (I just used a regular bread pudding recipe, and added dried apricots). We also had the leftover Heaven and Earth and some bacon.
After supper I took a break, then finally got going on my sewing. I got Shannon's shieldmaiden tank top sewn. I also put the boys to bed. Now I'm beat. :-)
HOMEMADE APPLESAUCE:
In a large pot place sliced apples, with a little bit of water. If you don't have a food mill, you'll need to core and peel the apples as well. Let stew over medium heat until very soft and mushy. If you have a food mill, then run it all through to remove seeds and peels. To the strained applesauce, add any extras you desire, to taste: sugar, cinnamon, raisins, red-hot candies, etc.
