Garden Onions are Sweet, and directions for Tuna Melts

August 9, 2007: Today I was a little tired from all of yesterday's activities, but not too much. I registered the girls with their schools in the morning and we had karate class. I spent the afternoon sewing with my friend, Kathryn. For supper we had tostadas with lettuce and onion from our garden. Julia likes garden onions--we've noticed that they're quite sweet.

I had Sisters Meeting (with our home church) in the evening.

We used up the last of the sourdough rye bread as Tuna Melts for lunch. I'll have to bake more bread in the morning.

TUNA MELTS:

Toast slices of bread. Top with drained, canned tuna mixed with mayonnaise and pickle relish. Top that with fresh sliced tomatoes, if you have some. Lastly, top with sharp cheddar cheese. Broil until the cheese is melted.

Another great way to have Tuna Melts is to cook a hard boiled egg (or more,

depending upon how many you're feeding), split your bread (or English Muffin) in half &

toast it, then place tuna mixture on top.  Split the hard boiled egg in half length-wise,

placing a half upon each piece of toast or English muffin.  Top with shredded cheddar

cheese (or your other favorite cheese) and broil just until cheese melts.  These were

my daughter's favorite (and mom likes them too!) :)
