Friday: Special Day. Make something different, fun or special for today. Right now we are greatly enjoying the Amish recipes in The Beverly Lewis Amish Heritage Cookbook. So far we've tried Baked Oatmeal, Egg in the Middle, Cornmeal Mush (fried, with syrup), and Pefect Pumpkin Bread. Other favorites here are Cheddar Cheese Omelet with canned peaches (or any kind of omelet), the South Beach Diet's Cheesy Spinach, boiled eggs, deviled eggs, Creme Brulee French Toast, any kind of muffin, Sticky Buns, Fruit Smoothies, whatever.
Saturday: Cereal and Milk. Mom wants to sleep in on this day, so the kids can get their own breakfast of cold cereal and milk. They love this breakfast. They've now discovered that raw oats in a bowl with milk is also very good--my 8yo son sprinkles a little sugar on top, but I prefer mine plain. They also know how to make their own toast if they're interested.
Sunday: Waffles. There are so many good recipes out there, and of course frozen waffles are always a treat. We usually make our own, however. One variation is to substitute 1/4-1/2 of the flour with whole wheat flour, and add a mashed ripe banana into the wet batter before adding it to the dry. The Amish cookbook mentioned above also has a recipe for Chocolate Waffles. When I make waffles, I like to melt a bag of frozen strawberries in a pot to serve on top of the waffles, along with a dollop of whipped cream.
