Since I just made 3 jars of homemade pesto, I froze two and we are eating the third. We are out of pasta at the moment, so instead we are having it on toast, as a vegetable dip, on chicken and in soup. Yesterday I made a South Beach Diet salad, where I took a slice of turkey deli meat, put on top a slice of American Cheese, and melted it in my toaster oven. Then I put on a small dollop of pesto before rolling up the meat and cheese together, then slicing it to put on my salad. It was delicious.
My friend uses pesto on homemade pizza, instead of pizza sauce, and her family just loves it.
And of course, everyone loves it on pasta.
